What we leave out
Most delivery food is made to survive a long kitchen shift. Ours is made the way a home kitchen does it. That starts with what never goes in the pot.
Cheap palm oil is common in commercial kitchens. We don't use it for cooking or frying, ever.
No artificial food colour. When our ghugni or curry looks rich, that's the haldi and masala.
No Ajinomoto, no MSG. The flavour comes from slow cooking and whole spices.
Dipped inThe OG Litti
Most places put litti straight on charcoal. The top and the base get cooked, and the inside stays doughy. We do it the slow way.
Our story
Bengaluru has food from every corner of the world. But ask anyone from Bihar or UP what they miss most, and it's never fancy. It's a plate of litti chokha on a Sunday. Dal-chawal that tastes like it came from home. A glass of sattu on a hot afternoon.
That food was hard to find here. And when we did find it, it rarely tasted like home. Too much oil, too much colour, a taste that felt made for a menu card and not for family.
So we went back to the source. We took the recipes straight from the kitchens we grew up in.
That's the heist. Litti stuffed with roasted sattu and pickle masala, barbecued on a slow flame till every layer is cooked, then dipped in ghee. Chokha mashed with mustard oil, smoky brinjal, onion and green chilli. Rajma, kadhi and khichdi cooked the slow, everyday way. And a rule we don't break: no palm oil, no artificial colours, no MSG.
Today Litti Heist cooks from kitchens in Koramangala, Electronic City, Marathahalli and Kudlu, from early morning till 3 AM. Whether you're from Patna or Pune, we want every box to taste like someone at home made it for you.
Litti chokha, explained
Litti chokha is the best-known dish of Bihar. Litti are balls of whole-wheat dough, stuffed with sattu (roasted gram flour) mixed with garlic, ginger, ajwain, lemon, green chilli and a little pickle masala. Traditionally they are roasted over cow-dung cakes or coal till the outside cracks. Then they're broken open and eaten with ghee.
Chokha is the side that makes it complete: roasted brinjal, potato and tomato, mashed with raw mustard oil, onion, garlic and green chilli. It's smoky, sharp and simple.
Because sattu is high in protein and fibre, litti chokha is filling without being heavy. At Litti Heist, our OG litti is barbecued slowly on a low flame and dipped in ghee, then served with fresh chokha. You'll get the same smoky taste in Koramangala that you'd get in Patna.
